spicy beef BBH noodle soup

Meal box.

Once Vietnam’s capital, the city of Huê is famous for its succulent Spicy Beef Noodle Soup or Bún Bò Huê (known to locals as ‘Bún Bò’ and to us as just BBH). And now, we’re boxing it up and delivering it to you.

Think tender beef, blended with aromatic lemongrass to form a rich, tangy broth. Stir in thick rice noodles. A drizzle of fermented shrimp sauce. And the not-so-secret ingredient that dials up the heat? A generous splash of fiery chilli oil. The more, the tastier.

To finish, BBH is topped with slices of beef brisket. The meat absorbs that fusion of flavours, for a spicy, buttery melt-in-the-mouth taste.

If you prefer soups with a kick, BBH is the one for you. BYO fire extinguisher.

  1. Unpack your meal box.
  2. Open your noodles and place it in a large bowl.
  3. Pour boiling water into your bowl of noodles and set aside.
  4. Once the noodles have softened, used chopsticks or tongs to gently separate the noodles.Drain the water with a colander.
  5. Place a medium pot on the stove and carefully pour in your broth.
  6. On medium-high heat, bring the broth to a bubbling boil. Keep an eye out for your broth as we don’t want it to over boil and evaporate. When boiled, turn down to lowest heat. Alternatively, you can also heat your broth in the microwave. All you have to do is place the broth in a large bowl and microwave for 4 – 5 minutes.
Make sure you transfer the broth as these containers are not microwavable!
  7. Portion your bowls starting with the rice noodles as the base.
  8. Add your choice of protein.
  9. Add your bean shoots in a mound and scatter spring onions, coriander and top with red onion.
  10. Once your broth has come to a boil, carefully ladle your broth into the bowl until noodles are covered.
  11. Squeeze your wedge of lemon, add chilli for extra spice. Add hoisin and sriracha to taste.
