Easy on the palate. Easier on the stomach. Deliciously light, Phở is renowned as Vietnam’s national dish. The first Phở bubbled up during the French occupation of Vietnam. Troops allegedly asked roaming street vendors for ‘feu’ – that’s French for ‘fire’ – to energise and fuel the body. In response, a clean broth with fibre-rich vegetables, fresh herbs and delicate noodles was created.
In the north, Phở tends to be clearer. More refined. Towards the south, the broth grows in pungency. In ours, it’s a balanced blend of both: a real soul warmer, from the inside out. A total crowd pleaser, that nourishes the heart. And satisfies the stomach.
