Easy on the palate. Easier on the stomach. Deliciously light, Phở is renowned as Vietnam’s national dish. The first Phở bubbled up during the French occupation of Vietnam. Troops allegedly asked roaming street vendors for ‘feu’ – that’s French for ‘fire’ – to energise and fuel the body. In response, a clean broth with fibre-rich vegetables, fresh herbs and delicate noodles was created.

In the north, Phở tends to be clearer. More refined. Towards the south, the broth grows in pungency. In ours, it’s a balanced blend of both: a real soul warmer, from the inside out. A total crowd pleaser, that nourishes the heart. And satisfies the stomach.

pantry Ingredients

* Please ensure you refrigerate you meal box ingredients if not being cooked immediately. Spring Rolls will need to be placed in the freezer if not cooked immediately. 

Phở instructions
  1. Unpack your meal box.
  2. Open your noodles and place it in a large bowl.
  3. Pour boiling water into your bowl of noodles and set aside.
  4. Once the noodles have softened, use chopsticks or tongs to gently separate the noodles. Drain the water with a colander.
  5. Place a medium pot on the stove and carefully pour in your broth.
  6. On medium-high heat, bring the broth to a bubbling boil. Keep an eye out for your broth as we don’t want it to over boil and evaporate. When boiled, turn down to lowest heat. Alternatively, you can also heat your broth in the microwave. All you have to do is place the broth in a large bowl and microwave for 4 – 5 minutes.
    Make sure you transfer the broth as these containers are not microwavable! 
  7. Portion your bowls staring with the rice noodles as the base.
  8. Add your choice of protein.
  9. Add bean shoots in a mound and scatter springs onions and coriander and top with red onion.
  10. Once your broth has come to a boil, carefully ladle into the bowl until noodles are covered.
  11. Squeeze your wedge of lemon, add chilli for extra spice. Add Hoisin and Sriracha to taste.
Springroll instructions
  1. Half fill a small pot with your choice of flying oil
  2. Place on medium heat.
  3. Once oil has Reached 176 °C, gently place your springrolls in the pot.
  4. Fry for 4 minutes or until golden brown.
