INGREDIENTS
Fish Marinade
2 x 200g Pieces of Barramundi or Chicken
¼ Cup Roll’d Turmeric, Lemon & Dill Dressing
1 Tbs Fish Sauce
1 Clove Garlic, Grated
3 Sprigs Dill
1 Spring Onion, 2cm Length
Salad
1 Lebanese Cucumber, Sliced 2 Small Red Onion, Peeled & Sliced
¼ Cup Mint
¼ Cup Coriander
1 Cup Mixed Leaves
1 Tbs Fried Shallots
2 Tbs Roll’d Nuoc Mam Sauce
2 Tbs Roll’d Turmeric, Lemon & Dill Dressing
1 Large Red Chilli (optional)
METHOD
1. In a bowl marinate the fish with Roll’d Turmeric, Lemon & Dill Dressing, fish sauce and garlic. Set aside for 15 mins.
2. In a pan over medium heat add a splash of veg oil, allow to heat then add the fish pieces. Cook 5-8 mins on each side or until cooked. Add the spring onion and dill and leave to wilt.
3. Mix the salad ingredients with the Roll’d Nuoc Mam Sauce and share over 2 plates. Top the salad with the fish (warm) and drizzle with Roll’d Turmeric, Lemon & Dill Dressing. Finish with fried shallots.
